The green Michelin star

The future of the kitchen is GREEN!

Guide Michelin is taking this into account and has already launched the Green Star in 2020. This honours the initiative of more and more ambitious restaurateurs to work and manage their businesses in a sustainable, ecological and future-oriented manner. It is not only the corresponding sustainable business management that is assessed, but above all the concrete implementation in the everyday life of the restaurants, such as the use of regional and seasonal products that are produced as ecologically as possible, the support of species-appropriate animal husbandry, short transport routes, energy and waste reduction.

In 2022, eleven establishments in Germany alone could be awarded the Green Star; a total of 61 restaurants are listed with the Green Star in 2022.
